Breakfast for Dinner



Dear Foodies,

After my post last night, I realized I am on a breakfast kick. The thought of the rosemary potatoes that came with David's hash inspired me to make my own. I diced about three potatoes we had on hand, and I scrambled some eggs with cheddar cheese and deli sliced ham.

To top it off we had Dave's Powerseed Bread whole grain toast with apricot jam. Ah, apricot jam - it can have it's own post someday. You see, my mom always uses apricot jam over the usual suspects like strawberry or raspberry jam. Apricot jam takes me back to being a kid. It reminds me of sick-days when Mom made me tea and toast.  If you haven't tried apricot jam before, I highly recommend the reduced sugar version that Trader Joe's sells. Check it out if you can.

Yumm... I like to use fingerling potatoes, cut them in half, boil them and then throw them in the sauté pan with olive oil, salt & pepper, oregano and rosemary so they get super crispy on the outside and soft on the inside! Then throw two eggs over medium on top.
